Snow Peas with garlic

I think I like snow peas.

This discovery occurred when these peas were cooked for dinner but ended up becoming hors d'oeuvres. Somehow it just happened. It wasn’t my fault, really. It was the smell of the roasted garlic and then one by one the pan just got emptier and emptier until there were no more.

I think it’s a pretty easy way to get some fiber, vitamins A and C, iron and potassium. Peas also have something called lutein, that’s supposed to help to reduce the risk of age-related macular degeneration and cataracts.

 

 

Snow Peas with garlic

ingredients

  • snow peas, tips of the ends cut off, strings removed
  • sliced garlic
  • olive oil

 

Heat olive oil in a pan on medium high heat. Add garlic, let start to brown. Add the snow peas Stir to coat with the oil. Cook for 1-2 minutes, stirring. You do not want to overcook the snow peas. They should still be a little bit crunchy.
